Ingredients:
1 tablespoon coconut oil
1 leek, sliced
2 big potatoes, chopped
2 garlic cloves, minced
2 cups vegetable stock
1 cup cauliflower florets
Sea salt & black pepper
Nutritional yeast (to taste)
Kale Croutons
1 cup kale, stems removed
2 teaspoons coconut oil
1 teaspoon Dijon mustard
Pinch of sea salt
Directions
- Preheat oven to 150°C (300°F) and line a baking tray.
- Toss kale with coconut oil and Dijon mustard, spread evenly, and bake for 20 minutes until slightly crispy.
- In a saucepan, heat coconut oil and sauté leek with a pinch of salt until softened.
- Add potatoes, garlic, cauliflower, and stock. Simmer until potatoes are tender.
- Blend until smooth (or leave slightly chunky if preferred).
- Serve warm and top with kale croutons, nutritional yeast, salt, and pepper.
