Golden Glow Lentil Soup

Some meals don’t just fill you up, they help you feel restored. This Golden Glow Lentil Soup is one of those meals.

It is warm, rich in protein and full of ingredients that support energy, digestion, and overall wellness that we so much deserve.

It is so simple to make without stress, perfect for the days you just want to chill. 

Why we love this meal in my family? 

It’s packed with protein, fibre, warming spices, mineral-rich greens, healthy fats and it just feels comforting overall.

What makes the meal so nourishing? 

Red lentils are one of the easiest legumes to digest and are loaded with plant-based protein, iron, magnesium, fibre

They keep you full, great for steady energy and are great for the digestion and healthy gut. 

Garlic & Ginger together may help to support digestion, reduce inflammation and support immunity.

Turmeric & Cumin are anti-inflammatory spices great for digestion and reducing inflammation

Tomatoes &  Spinach are great for skin health.

Adding avocado makes this meal feel complete and so satisfying. They support hormone health and keep you fuller for longer.

Ingredients:
  • 2 teaspoons coconut oil
  • 1 yellow onion, finely chopped
  • 1 celery stalk, finely chopped
  • 4 garlic cloves, grated
  • Ginger root about 1 inch, finely grated
  • 1¼ teaspoons cumin
  • ½ teaspoon turmeric
  • 8 cherry tomatoes, diced
  • 2 cups vegetable stock
  • ¾ cup red lentils
  • 1 cup spinach
  • 1 tablespoon lemon juice

For Serving 

  • Fresh coriander
  • Crushed red pepper
  • ½ avocado
Directions:
  1. Heat coconut oil in a saucepan over medium heat.
  2. Sauté the onion and celery until softened.
  3. Add garlic and ginger and cook briefly until fragrant.
  4. Stir in cumin and turmeric.
  5. Add tomatoes, stock and seasoning as you desire, add lentils. Simmer until lentils are soft.
  6. Stir in spinach and lemon juice.
  7. Serve warm with avocado, coriander, and crushed red pepper.
